A new rooftop tequila and mezcal bar has opened in Sydney boasting an extensive selection of Mexican spirits, a great range of food and an all-star bar team.

El Topo, located on the top floor of The Eastern in Bondi Junction is a spacious Mexican bar and restaurant that can cater for over 200 people.

The fitout (pictured) is bright, colourful and playful featuring a variety of traditional Mexican decorations and icons. Guests have a range of indoor and outdoor seating options including booths and communal tables.

Bar consultant Dan Woolley has put together an acclaimed bar team that includes Tim Philips, Luke Redington, Connor Sainsbury-Canham, Brett Harris, Dean Sykes, Rory Vega and Brendan Keown.

They have an extensive back bar to work with featuring close to 100 tequilas, mezcals and sotols. The bar also offers several aged and rested sipping tequilas that have been chosen to complement the food, and there will be tequila and mezcal flights available.

 The rest of the drinks list features light wine styles from across the globe, imported Mexican beers and non-alcoholic Aqua Frescas. The Oaxaca-influenced Mexican food menu offers bar snacks such as fried crickets with garlic and chilli, along with a delicious selection of tacos and quesadillas as well as pork, beef and seafood dishes created by head chef Matthew Fitzgerald.
