The George Hotel will reopen its doors later this summer after its anticipated transformation. New owner Scott Conolly stated: “We’re thrilled to be part of this community and hope that The George will continue to hold a firm place in the hearts of South Melbourne locals while also welcoming a new generation of pub-goers.”

Connolly also owns two other Victorian hotels, the Orrong and Healesville Hotels.

“Like The Orrong and Healesville hotels The George presents an opportunity to help revive an icon. South Melbourne has traditionally one of the strongest pub cultures and we are looking forward to being a part of it.”

The renovations are set to introduce a variety of spaces to the 150 year-old pub, including a public bar and connecting bistro-style dining room downstairs as well as a courtyard, upstairs function space and extended seating outside.

“Homely hospitality and classic pub fare is at the heart of our new offering at The George and we look forward to bringing back that warm pub atmosphere and celebrating the building’s welcoming historical character with restored interiors,” Connolly continues.

“We’ve partnered with Anouska Milstien at studio ami, she’s given us a really cool retro design. We are really focused on community so primarily local business and residents as well as market traffic.”

Running the kitchens is head chef Steve Svensen (ex-Lenny and Moby).

The George is set to reopen in early 2025.
