Momento Hospitality has enhanced its summer offering with the relaunch of The Gov Rooftop at The Governor Hotel in Sydney’s Macquarie Park.

Seating 300 patrons, the 650sqm open-air rooftop bar joins the pub’s existing sports bar, bistro and grill and entertainment zone, offering a dynamic day-to-night experience suited to large groups.

Ahead of the reopening, The Gov Rooftop underwent a transformation led by designer Jamie Wirth, incorporating natural tones and greenery around a blue tiled bar at the centre of the space.

General manager Paddy Walshe says: “Nothing of this scale and vibe exists on this side of the bridge. With 300 seats, we’re redefining what a suburban rooftop can be – it’s big, it’s vibrant, and it’s laid back. We’re offering the community an alternative to travelling into the CBD for their fun.”

Along with the fresh new look, The Gov Rooftop has unveiled a pan-Asian food menu with a focus on shareable plates. Spearheaded by head chef Roon Park, the menu features build-a-bao buns filled with katsu chicken or sesame tofu and prawn rolls, paired with flavourful dishes such as robata skewers seasoned with Japanese-inspired glazes and kingfish ceviche with mixed citrus.

To complement the food offering, group beverage manager Luke Redington, who joined the Momento Hospitality team in August this year, has curated a specialty drinks menu that makes use of native and local ingredients.

“We’ve created a drink offering that speaks to its surroundings, as the largest rooftop outside the CBD. Cocktails like the Sentosa Cove, named after Singapore’s vibrant food and beverage hub, embody the multi-cultural essence we wanted to showcase,” Redington explains.

“This cocktail features a shiso leaf salt rim, floral and savoury tequila and Australian rhubarb liqueur. We then sweeten with a yuzu flavoured honey and finish it with locally pressed lime. The balance of sweet, sour, salty, savoury and umami are highlighted in every sip.”

Other cocktails include Shi Shi (yuzu, mango, lemon myrtle and ginger) and Cyclone (peach wine, lemon myrtle, sweetened grapefruit, powdered citrus and Riesling), served alongside classics such as the Pornstar Martini, Espresso Martini and Aperol Spritz.

Bringing together the cocktail selection and share-style Asian dishes, The Gov Rooftop has introduced a bottomless banquet experience. When paired with the live entertainment lineup, Momento Hospitality hopes to deliver on its commitment to create memorable social hubs.

The relaunch of The Gov Rooftop brings a new element to Momento Hospitality’s diverse portfolio, but the current major project for the group is the opening of Oran Park Hotel, with the first stage of the development expected to open to the public soon.
