A new hospitality venue will open in the heart of Marrickville next month, with Public House Management Group (PHMG) transforming The Ritz into The Montague Hotel, a dual-level destination with a new identity.
Blending the familiarity of a modern Australian pub with the buzz of a late-night lounge across two distinct yet cohesive spaces, the venue is designed to serve as a local cornerstone for Sydney’s Inner West.
At street level, The Montague, affectionately known as The Monty, is a community-driven space offering a fresh take on the traditional pub. At the helm of the kitchen, PHMG group executive chef Scott Greve (ex-6HEAD and Jamie Oliver Group) and head chef William Lesmana have taken an ingredient-led approach, putting a modern Australian lens on classic pub fare.
With an emphasis on fire-cooking, highlights from the menu include charred prawns and chargrilled porkchop, served alongside schnitties, parmis, dry-aged steaks and more.
Greve stated: “Marrickville’s food scene blends old-school charm with bold creativity, and The Montague captures that spirit. We’re pushing the boundaries of classic pub food through fire cooking and expert dry-aging – this is pub fare, elevated.”
Lesmana added: “After meeting Scott five years ago, we’ve been cooking side by side ever since. He’s been a mentor and gave me the opportunity to lead this kitchen. I’m proud of what we’re building – and I can’t wait for people to experience it.”

Upstairs, booth seating, marble bar tops and disco balls at lounge bar Harriet’s set the scene for laid-back afternoons, before shifting to high-energy evenings on Saturdays when the bar is dubbed Bad Harriet’s.
The dial has also been turned up on the food offering at Harriet’s, with standout dishes such as wagyu beef tartare, 800g pork tomahawk and wagyu skewers. Behind the bar, patrons will find a vibrant signature cocktail list featuring Watermelon Sugar High (vodka, ginger liqueur, lime, watermelon syrup and pineapple juice) and Casa Rosa (Espolon Reposado, strawberry liqueur, coconut and lime).
With a total capacity of 300 people across the two levels, The Montague Hotel was designed and built by Venari Projects, which PHMG also worked with on the redevelopment of The Toxteth in Glebe.
In addition to The Toxteth, PHMG’s portfolio includes Humphrey’s Hotel in Hurstville, The Royal Hotel in Paddington and Minskys Hotel in Cremorne, which the group acquired from Redcape in 2022.
