Solotel has unveiled its new concept for the western Sydney pub, previously known as The Carousel Inn. The pub will be completely transformed and has been renamed The Woodstock.

Solotel has announced the name change to The Woodstock, as part of a multi-million dollar transformation of the pub in Sydney’s northwest, ahead of its relaunch in September.

With a new name, transformed experience and a major expansion of its spaces and offering, The Woodstock will be a new hospitality destination for Rooty Hill residents and the growing northwest of Sydney.

Solotel acquired the hotel off the Stanford family in 2021, with CEO Elliot Solomon at the time noting that Sydney’s north-west was a key growth corridor within Sydney.

Currently in the middle of construction, the venue is being completely rebuilt to create a thriving food, beverage and entertainment destination.

Solomon stated that the rebuild was one of the biggest investments the group has ever undertaken.

“We have created The Woodstock to be the place locals love, whether it’s for a family dinner, a milestone celebration, or a few drinks with friends. We’re building out an exciting calendar of events, forging partnerships with local sporting clubs and community groups that will enrich the local area and give everyone a new community home,” stated Solomon.

“We’re here for the long haul and it’s all hands-on deck for the next few months until we open. We can’t wait to show the Woodstock to everyone”.

The centrepiece of The Woodstock will be a warm, family-friendly bistro, with a menu built around generosity, flavour, friendly service and value for money. Mediterranean-inspired pub classics will headline the menu, including woodfired pizzas, grilled meats and share dishes.

The Woodstock will be a destination for families, with a large, dedicated kids play area featuring a slippery dip, a ping pong table, a climbing wall and swings.

Outside, the Garden Bar will provide a bright and leafy oasis perfect for weekend catch-ups, after-work drinks, work lunches and relaxed group gatherings.  The concept aims to offer the best of indoor-outdoor pub culture, backed by classic drinks, a rotating cocktail list, and a fun menu of house-made slushies.

The Sports Bar will include TV screens and plenty of high-top seating options for beers and bar snacks. There will also be a lounge area behind the sports bar for more relaxed seating and sport-viewing entertainment with a fireplace.

One of the most unique features of the redevelopment will be a brand-new 250-person capacity functions and event space, complete with state-of-the-art audiovisual capabilities. The flexible space has been purpose-built to host a broad range of functions, from corporate events to weddings, birthdays to big family celebrations – with the aim to make The Woodstock a major events destination for the western suburbs.

The Woodstock will open its doors late September with a full week of launch celebrations and events.
