In a major portfolio overhaul, Sonnel Hospitality has announced redevelopment plans for four of its venues: Crossroads Hotel, Ashfield Hotel, Ermington Hotel and New Victoria Tavern.

Just last month, the hospitality group lodged a Development Application (DA) for the $34m expansion and renovation of the Crossroads Hotel in Casula. Delivering on its commitment to transform Western Sydney’s hospitality landscape, the operator has since shared development plans for the three additional venues.

With the DAs now in progress, the upgrades reflect Sonnel Hospitality’s continued investment in the creation of community-first hubs with premium food and beverage offerings, says CEO Simon Meers.

“We’ve been working very closely with experts in the field – Justine Baker, Tim Fitzgerald our new chief operating officer, Simon Sandall, Brendon Hill and our venue teams – and we’re focused on creating offerings that reflect modern tastes while staying true to what our locals want. We’ve done this at the Guildford Hotel and most recently at the new-look Marrickville Tavern, which have both been well received by the community.”

The redevelopment of the Ashfield Hotel will preserve the rich heritage of the pub while modernising its food and beverage offering, including a completely reimagined dining experience, open rooftop space and a sports bar.

At the Ermington Hotel, a $29m transformation will include the construction of an on-site café and bakery, a contemporary bistro, cocktail lounge, expansive children’s play area and enhanced entertainment featuring a bowling alley. The redevelopment also includes a 40-room accommodation offering and a 200-capacity function centre.

An uplifted food and beverage offering will transform the New Victoria Tavern into a space that accommodates a diverse range of drinking and dining occasions. The addition of large sports screens will also enhance the pub’s capacity for live events.

The transformation of the Crossroads Hotel will fuse hospitality, entertainment and accommodation with the introduction of a sports bar, cocktail lounge, newly-designed bistro, large-scale children’s play area, redesigned car park, 200-person function centre and 39-room accommodation offering.

Our redevelopment plans for each of the hotels are reflective of this and we’re excited to have the wheels in motion,” he stated.
