Tilley & Wills have confirmed their plans for The Clovelly Hotel after purchasing the hotel from Solotel in October 2018
The group behind Sydney’s Verandah Bar, North Sydney’s Greenwood Hotel and The Buena in Mosman have revealed their plans for The Clovelly Hotel this summer.
The team have vowed to focus on “community and summer events bringing the pub back to its former glory,” a spokesperson told Australian Hotelier.
The group’s Nick Wills said: “This venue has so much potential, the bones are great, everything is here, we are excited to put our spin on things,” says Wills.
“With the introduction of a kid’s area and fresh styling shift for the back bar and bistro we really feel there will be something for everyone. We want The Clovelly Hotel to be a true extension of everyone’s homes, a place for locals and visitors alike to come and hang out,” Wills continued.
The team are looking to maximise the beer garden via a selection of outdoor pop-up bars every weekend across summer. Meanwhile Tilley & Wills are looking to continue the venue’s history of live music with DJs planned.
Group Head Chef Brad Sloane has tweaked the current food menu with plans for a brand-new menu launch in the new year.
“Essentially we want to get the classic pub basics right and build from there at The Cloey,” Sloane says. “There was a feeling when we took over that some of the basics needed to come back onto the menu. A gastropub version of the parmigiana, excellent fish and chips – plus a few high-end options for those splashing out. With our proximity to the ocean we will have a heavy focus on seafood dishes.”
The Cloey will also host an inaugural free New Year’s Day Party, turning the beer garden pink with customers encouraged to wear the colour. This pink party theme continues with Hawkebury Brewing Co rose beer, rose bubbles, a pink spritz and pink gin cocktails.
