Award-winning group Universal Hotels has launched a new flagship venue, Darling Pavilion, in the heart of Sydney’s Darling Quarter.
Welcoming the new venue to its 16-strong pub and restaurant portfolio, Universal Hotels opened the doors to the multi-million dollar pub last week.
The expansive new Pavilion-style pub brings a fusion of Mediterranean-inspired elegance and casual charm, incorporating a laidback atmosphere with the sophistication of its specially curated food menu and handcrafted cocktails.
“Darling Quarter holds fond memories for many Australians. It’s great to see the whole area evolve with time and we’re excited to introduce Darling Pavilion to the mix,” said Jim Kospetas, managing director of Universal Hotels.
Darling Pavilion seats over 350 patrons, comprising both an expansive outdoor terrace and a light-filled indoor space. The 1000sqm venue is anchored by a 20-metre stone bar, creating a warm ambience with sleek tiled tabletops, whitewashed walls and lush greenery throughout.
Universal Hotels tapped Head Chef Kyle Quy, 2007 Young Chef of the Year Award winner, with the creation of a laid-back menu in conjunction with Dean Sammut, Group Executive Chef.
Delivered from an open-plan theatre style kitchen, Quy’s team will be serving up a range of signature dishes incorporating familiar pub classics with touches of Mediterranean inspiration. Diners can expect flavourful Neapolitan style pizzas and classic burger and pasta dishes, alongside shared platters of whole roast shoulder of lamb with decadent trimmings.
The extensive drinks offering includes an array of classic beers and wines, alongside a signature cocktail menu crafted using seasonal and artisanal ingredients.
Open from 10am to 3am daily, Darling Pavilion is located at 1 Harbour Street, at the foot of Tumbalong Park.
