House Made Hospitality (HMH) is set to open two new hotel bars, which along with two new restaurants, are part of a $60m refurbishment at the Sofitel Sydney Wentworth.

HMH Director, Jason Williams will work with Sofitel’s Precinct Beverage Manager, Restaurant and Bars, Christian Blair to cultivate the drinks and cocktail menus in the venues.

“We know this area of Sydney CBD intimately and look forward to further enhancing the neighbourhood for locals and visitors,” said HMH director Justin Newton. “We want to bring old-world glamour back to hotel drinking and dining in Sydney and restore the reputation it had in decades past – much like the plans for the revitalised Sofitel Sydney itself.”

The two new bars include Bar Tilda, which will be adjacent to the new ground floor restaurant Tilda and will aim to evoke the glamour and nostalgia of the 1960s. With room for 90-people the bar will also be home to 100 Australian whiskies and guests will be able to enjoy whisky-tasting experiences and Australian whisky flights. There will also be a comprehensive cocktail menu comprising classic and modern drinks.

The Wentworth Bar on Level Five is aiming to become one of Sydney’s most spectacular al fresco drinking destinations. The bar will hold up to 250 guests and will become the first venue to make ‘cocktail explosions’ large-scale cocktails serving up to 10 people, which were popularised at the NoMad Hotel in New York City.
