Spring is an underrated season to explore whisky, particularly when you turn your attention to the bright and lively character of Australian whiskies, which are crafted to suit our unique climate. So, how can whisky become your go-to drink for the warmer months? Let’s dive into why whisky works in spring and summer, some refreshing serving styles, and which Aussie whiskies should be on your radar this season.

Why Whisky Works in Warmer Weather

Whisky may conjure images of cosy winter nights, but it can be a perfect partner for warmer weather as well. The key lies in the complexity and versatility of whisky — particularly the lighter, fruitier styles or those finished in wine casks that bring a fresh, bright character to the palate. Australian whisky, with its unique terroir and often lighter, more approachable profiles, lends itself beautifully to this seasonal transition.

Here are a few standout Aussie whiskies that are worth exploring over the spring and summer:

1. Lawrenny Homestead

A delicate union of American Oak and French Oak layered over our spirit’s bounty of tropical fruit notes. Homestead is a triple cask matured release where maturation has occurred across a combination of ex-bourbon, port and sherry barrels to deliver a unique single malt whisky.

Homestead invites you in with a nose reminiscent of fresh rain and blooming florals. The palate is structured and nuanced as white peaches give way to banoffee and candied ginger. Smoked almonds drizzled in golden syrup complete the long, smooth finish.

2. Amber Lane Alchemical Series – Air

The Alchemical Series from Amber Lane is an exploration of whisky through the elements, and ‘Air’ offers a delightful spring experience. This single malt has been elevated with lighter floral notes through time spent in a second-fill ex-Botrytis cask, resulting in an ethereal, delicate whisky that’s perfect for warmer weather. With an ABV of 53.5 per cent, it’s strong yet balanced, and its floral profile makes it ideal for a refreshing whisky highball or simply enjoyed over ice. A product of South Australia’s Tin Shed Distilling Co., Tunkalilla Whisky boasts notes of eucalyptus, caramel, and honey, with a gentle peat smoke finish. This whisky’s softer, herbaceous smokiness sets it apart from traditional peated whiskies, making it an excellent companion on spring and summer evenings.

  • My personal favourite cocktails: spring is perfect for whisky cocktails (whisky sours-mint juleps-whisky smashes) with fresh citrus and herbs are all great options.
