C.inc managing director Christopher Cheung, owner of the Coogee Bay Hotel, has revealed his vision for recent Kings cross acquisitions The Bourbon and the neighbouring venue Club Swans.

Cheung’s company C.inc reportedly paid $22 million for The Bourbon and Club Swans last week.

Cheung is now planning to revitalise The Bourbon, formerly the Bourbon and Beefsteak, once a popular destination venue and re-establish its landmark status.

“The intention is to keep Club Swans as is and we are in negociations in how to move forward,” Cheung told TheShout.

“We have plans to redevelop The Bourbon but we’re still in the embryonic stage of development. We want to revitalise the iconic Bourbon brand and recreate the site as a destination venue, a primary food destination, an entertainment destination and a late night trading destination.”

Cheung said that he was excited about the project and reiterated that The Bourbon would be a pub not a nightclub in the somewhat nightclub-heavy Kings Cross area.

C.inc owns and operates the Coogee Bay Hotel in Coogee, Cruise Bar in West Circular Quay and Key Largo Bar & Bistro in Rushcutters Bay.
