One of Sydney’s top CBD bars – Zeta Bar – is hosting cocktail ‘Deconstructed Nights’ where the flavour elements of classic cocktails are served individually, allowing customers to reconstruct them to their own taste.

Based on a popular British innovation, the unique concept manipulates and alters the individual flavours of classic cocktails. For example, the ‘Deconstructed Pimms Cup” made from Pimms, fresh summer fruit, and ginger beer with a cucumber foam is served platter- style for patrons to reconstruct to suit their palate.

Another cocktail, the ‘Luxury Zeta Margarita’, is served martini style on a platter with Patron silver tequila shaken with Cointreau and freshly pressed lime juice, along with a with a side of sea-salt foam in a baked and caramelised lime shell, which allows patrons to balance the drink with salt to their liking.

Zeta drinks consultant Grant Collins said the concept has proved to be a hit. “It’s a great education and a sensory experience for them. People love the fact that they can adjust it to their palate,” he said.

The ‘Deconstructed Nights’ are held on Wednesdays.
