One of Australia’s most lauded chefs, and Public House Management Group’s culinary ambassador, Guillaume Brahimi, held a showcase of dishes from his new cook book at The Collaroy over the weekend.

Brahimi did a 40-minute cooking demonstration to a crowd of more than 50 locals and food lovers, using recipes from his new book, Food For Family. After the demonstration, which sold out quickly, attendees enjoyed a three-course lunch prepared by the chef, at the Northern Beaches hotel.

The lunch consisted of an entrée of ocean trout gravlax with celeriac remoulade and toasted sourdough, a main of duck ragout with green olives and coriander, and ended with a chocolate and dulce de leche tart with hazelnut ice cream.

“The Collaroy was thrilled to bring this culinary experience to the northern beaches region. The day proved to be a brilliant success, with a bustling atmosphere and energetic audience,” said Mitchell Waugh, CEO of Public House Management Group.

All three of Brahimi’s dishes will be available at The Collaroy for the rest of the month of June.
