Re, Matt Whiley’s zero-waste cocktail bar and former winner of the World’s Most Sustainable Bar award, is reopening at Public Hospitality’s The Norfolk next month.

Whiley closed the Everleigh venue last month, but the new iteration of the bar will continue his founding principles around minimising waste and the team will again design, distil and serve bespoke zero-waste cocktails.

The link with Public Hospitality will also see kitchen waste from the groups 15+ venues used on Re’s cocktail menu. With venues including the likes of Maybe Sammy, Sammy Jnr, El Primo Sanchez, Busby’s, Ricos Tacos, Derrel’s, Lady Hampshire and Dean & Nancy on 22, Whiley has already started developing cocktails using their waste and plans to develop a signature cocktail based on each.

The menu is being developed in collaboration with Public’s creative culinary director, Clayton Wells, with the pair working with ingredients for the cocktails and how they intertwine with the food.

“Bringing Re to Redfern at The Norfolk feels like the right move for the bar,” stated Whiley.

“We never want to stop being creative in our practice so finding this location energises us and gives us more opportunity for us to stretch into new material and work with new people

“It’s also great to help Public reduce their impact across their award-winning pubs, hotels and bars, as I believe this process of minimising waste is something we should be embracing across the industry.”  

Work has already started on the new bar, which will be located at the former site of La Salut, and interiors, the bar and kitchen will all be sustainably reimagined for Re. The opening date for the bar will be announced soon.

As part of the new location for Re, Whiley will also oversee Public’s waste management to reduce its impact and become more environmentally conscious.
