Jerk is the new black, and with dude food forming the backbone to many an Australian bar menu these days, a focus on spiced meats to complement a rum-based menu makes mouth-watering sense.
Brisbane’s new rum and jerk shack Jahh Tiger brings a slice of Jamaica to Milton’s Park Road. Local Petrie Terrace bar manager Lucy Forsyth took off to bask in the culture of Jamaica last year and knew immediately that the laidback environment and rum and jerk combination would sit neatly in the high humidity, laidback yet devouring of small bar culture inner city Brisbane suburb.
The former Bouchon spirits representative says Jahh Tiger will focus on great drinks, music and food “in a space that epitomises Jamaica’s vibrant and colourful soul” when it opens on October 27.
“Jamaica is known for its traditional jerk chicken, fresh fruits, flavour-packed rum and charismatic culture – that’s what we hope to serve up in Brisbane,” said Forsyth.
Jerk Chicken was created in the town of Boston Bay, Jamaica, and is a marinade that combines a blend of spices, herbs, honey and rum, grilled on a wood-fired BBQ.
Jahh Tiger will use original Boston Bay recipes for its jerk sauces.
As well as working with Bouchon, Forsyth won several awards as a bar manager and drinks expert, managing bar programs previously at the Emporium hotel (Fortitude Valley), Little Jumbo (CBD) and 1 degree (Eagle Street Pier).
