Darlinghurst pub The Green Park Hotel has opened pop-up concept bar, Cantineros, in a bid to secure a slice of Sydney's burgeoning small bar market.

The Cuban themed bar occupies the rear of the hotel, accessing Liverpool Street, to provide the bar with street appeal.

Cantineros pays homage to a group of American bartenders, known as the Cantinero Club, who moved to Cuba following the enactment of The Volstead Act, which signalled the dawn of prohibition.

Cantineros’ motto is: food, drinks and music; with a focus on la vida loca pre-revolution Havana-style. The pop-up offers three classic cocktails (Mojitos, Cuba Libres and Hemingway Daiquiris) and Cuban beers as well as traditional Cubano sandwiches (roast pork loin, ham off the bone, Swiss cheese, pickles and yellow mustard), available in two varieties: The Cubano (classic) or the El Jefe (extra spicy).

Cantineros is open Thursday to Sunday, 5pm til late, until the end of February 2015.

Cantineros, The Green Park Hotel, 360 Victoria Street, Darlinghurst, Sydney.
