On Wednesday evening, Sydneysiders were treated to the launch of the Morris Whisky Tokay Barrel at the recently opened Bridge Lane Bar.
“I’m really proud of this one. It comes about as a marriage of American with a skew towards French oak, and it’s finished in our own Topaque barrels,” explained head distiller Darren Peck.
The liquid is finished in 15-year-old Morris Cellar Reserve Grand Topaque (Tokay) barrels, resulting in a mature whisky with notes of creamy malt, fresh fruits, and butterscotch.
“What you find is that it rounds the whisky, it gives you a very delicate aroma. You’ve got some of the wine aromas as well, and then you’ve got the finer, softer palate of Tokay,” Peck described.
