Award-winning venue operator Mucho Group has unveiled its latest concept, Herbs Taverne, delivering a distinctive interpretation of the classic aperitivo experience.

Set to open on Saturday 3 May, the Clarence Street Negroni bar will blend European tradition with Mucho Group’s signature approach to hospitality.

Putting a creative edge on the classic Negroni, the menu will consist of 12 core drinks, including three Negroni riffs, three aperitifs, three house-blended digestifs and three original cocktails. The menu will also feature a monthly Spritz special, while the back bar will be stocked with a handpicked selection of iconic and rare amaros.

Jeremy Blackmore, Creative Director at Mucho Group, says: “Each drink is built to be purely delicious but also surprising.

“They each have something unexpected, from pairing amaro with parsley, or Gentian with passionfruit, even pairing Calvados and Żubrówka. Sometimes these combinations are more than the sum of their parts. It’s these combinations we’re looking for.”

Turning to a whole new genre of drinks, Herbs Taverne will be the sixth venue in the group’s Sydney-based portfolio, joining Enmore Road martini bar Bar Planet, CBD tequila bar Centro 86, miniature mezcal haven Cantina OK! – awarded Best Agave Spirit Bar at the 2024 Australian Liquor Industry Awards – and Surry Hills tequila bar Tio’s Cerveceria.

Mucho Group says: “Like all Mucho venues, the goal is to push past pretty good and into the psychedelic — with an emphasis on fun. At Herbs, these classic European drinking traditions have been filtered through Sydney’s eclectic flavour pantry, from Polish delis to Chinese grocers.”
