Dugite Whiskey has been a passion project of Great Southern Distilling Co Founder and Master Distiller Cameron Syme, to deliver on one of his long-term goals of delivering a premium yet accessible Australian whiskey to the market. 

This has been made possible by the relatively recent acquisition of the Tiger Snake Distillery in Porongurup, 30 minutes outside of Albany in Western Australia (where his globally acclaimed Limeburners Single Malt Whisky Distillery is situated). 

A 4,800 square meter facility set on 30 acres in the shadow of the stunning Porongurup mountain range, the scale of production possible at this property has enabled the development of Dugite Whiskey without any compromise in quality.

Just like all Great Southern Distilling Co whiskies, Dugite is aged in second-fill, ex-bourbon American oak casks with the bulk of the barrels 200 litres.

Rest this richly golden whiskey in a glass for a moment to allow it to develop. With burnt caramel and vanilla notes on the nose, upon sipping there’s rye and corn on the palate and a hint of hazelnut. The mouthfeel is like that of a rich crema on coffee, and there’s a slight oiliness on the finish. It’s all rounded out by a final hint of vanilla.

In line with Great Southern Distilling Co’s existing brands, Dugite Whiskey is a premium hand-crafted spirit using exclusively Western Australian produce.  It is made from premium Western Australian grain and pristine Porongurup rainwater, with an ethos focused squarely on sustainability. 

Continuous improvement of processes to ensure minimal negative impact on the environment is a core principle that Cameron Syme is constantly working towards.

“Our production is four times larger than at Limeburners, and we have capacity to more than double that as we grow. We have also focussed on sustainability – we have 35kw of solar power generation, a 2,500 solar hot water system and a number of other initiatives that permit us to produce sustainably with no damage to the environment, and in a manner that is economically feasible. This will continue to be our focus with Dugite – to produce a good honest whisky for the everyday Australian.”
