International chef Kevin Cherkas, tequila guru Phil Bayly and WA's top liquor and gaming bureaucrat Barry Sargeant will be among the presenters at the Australian Hotels Association WA's Hospitality Conference, to be held in Perth next week.

Barry Sargeant and AHA WA CEO Bradley Woods will kick off proceedings with a "no holds barred frank and open presentation" on liquor licensing on Tuesday.

Later on delegates will hear from Phil Bayly, the man who inspired academy award winner Kevin Spacey to claim that his favourite memory of Australia were Sydney's Cafe Pacifico margaritas. 

Wednesday will host the Australian speaking debut of international chef Kevin Cherkas – formerly of Three Michelin Star restaurants El Bulli, Arzak and La Broche – who will share with delegates the many lessons and errors that have propelled him forward.
