The Lexus Appetite for Excellence Awards is calling for applicants from the hospitality industry for its national best young chef and best young waiter competition.

Applications for Lexus Young Chef and Lexus Young Waiter 2008 are open to chefs and waiters aged 30 or below currently working in the restaurant or catering industry in Australia. Chefs are invited to submit a seasonal menu comprising entrée, main and dessert. Waiters are invited to submit answers to questions testing their customer service, food and wine, and team leadership skills.

Entries will be assessed by a judging panel comprising of Australia’s leading chefs and restaurateurs, resulting in finalist being chosen from each state. A mystery box cook-off with national judging will take place in Sydney on June 30, with an awards presentation event held on August 11.

The winning chef will represent Australia at the San pellegrino Cooking Cup in Venice next year, one week’s work experience at Salt in Tokyo, a two-day tour of the Champagne region in France and $2500.

The winning waiter will receive trip to Tuscany and Venice, one week’s work experience at a premier London restaurant and at Salt in Tokyo, a two-day tour of the Champagne region in France and $2500.

Applications close on April 4.
