The nation’s newest brewery is one step closer to kick-starting operations, with the arrival of Stone & Wood Brewing Company’s brewhouse direct from DME in Canada. 

Headed up by Matilda Bay Brewing Company’s former brewer, Brad Rogers, together with marketing professional Jamie Cook and sales and business development manager, Ross Jurisic, Stone & Wood marks the first brewery for Byron Bay in NSW.

The team has been busy installing the boilers, refrigeration system, air compressors and tanks, and will soon be ready to commission at the site they’ve built from scratch.

“It was a blank canvass,” Rogers said. “We sourced the shed a year ago so it’s nice to finally see some brewery gear in it. The real focus now is to have all our services installed and we hope to have beer by as early as November so we’ll be working around the clock.”

While the Stone & Wood team is keeping quiet about the types of beer they will be brewing, Rogers said the idea is to make a small number of beers but to “make them really well”.

“We’ve got 390 kegs arriving into Byron so we’re about to go through the cleaning process and it’ll be nice to get some beer in them,” Rogers said. “We’re making sure we’ve got all the ingredients with the malts and hops, and we’re working through that. It’ll be really nice to get some beer out there again.”
