Fraser Short today opens his much-anticipated new venue in the heart of Sydney, styled as a ‘charismatic and cheeky’ New York-style brasserie.

Occupying three levels on the site of the former Brooklyn Hotel, Short’s new creation, The Morrison Bar & Oyster Room, is a restaurant and bar specialising in oysters, freshly shucked to order.

The venture includes a partnership with acclaimed chef Sean Connolly for a modern eatery that promises a world-class menu.

George Street level hosts the Oyster Room with shucking on show, and downstairs The Parlour is an attractive small bar and cocktail experience.

Upstairs, The Conservatory is an open air terrace to rival anything in the CBD, enjoying a prime position overlooking the downtown Sydney district.

Short was reputedly inspired by his travels and experiences in New York, and felt Sydney was missing something homely yet styled.

“We want to create something that give back to the history of the site and have chosen to hand-craft a restaurant and bar concept in line with this,” Short said.

The Morrison opens to the public today, but a discrete industry launch took place last Friday, July 27.
