Gallagher Hotels has partnered with internationally acclaimed chef, Darren Simpson. The partnership will see Darren work with the Gallaghers team on recipe and menu development across the group’s Irish staples, PJ Gallagher’s Irish Pubs and French venues, Le Pub and The Union.

Darren brings over 22 years culinary experience, which kicked off by being named ‘Best Young Chef in UK’ at 21, followed-up by featuring at some of the best restaurants in the world such as Michelin-starred Roscoff in his native Northern Ireland and Michelin-starred Le Gavroche in London. More recently he has made waves on the Australian food scene having worked at a number of Sydney restaurants.

“The team at Gallaghers is doing some great stuff already in providing their patrons with top-notch food offerings and warm service so I’m looking forward to working with them to further develop this,” said Simpson.

“Patrick Gallagher and I hit it off from our first conversation. We’re just two guys with a passion for delivering quality food and also love enjoying a cheeky drink – we wouldn’t be Irish otherwise.”

We also saw a lot of synergy between him and Gallagher Hotels with both of us having evolved from Irish roots to embrace other international cuisines. The team is looking forward to working with him to create more inspiring menu options for our guests, and of course soak in a bit more of that mischievous Irish charm of his.”
