A highly anticipated Melbourne bar – The Galley Room – has officially opened its doors, with an exclusive launch party last night (Mar 4).

Located in Flinders Street, the cocktail bar will have a focus on premium drinks and service, with music and DJs on Friday and Saturday nights.

The cocktail list has been designed by former Australian Liquor Industry Awards (ALIA) Bartender of the Year Jason Williams, who will also head up the bar team.

“We are passionate about creating an experience for our guests,” he said. “We love making drinks whilst offering a warm smile and friendly chat.”

His menu features homemade ingredients such as raspberry syrup, green apple sherbet, grilled pineapple foam and peach tea air, while the backbar is home to well-sourced and hard-to-find spirits.

In addition, executive head chef, Darren McKinlay is offering a pub-style menu featuring dishes such as burgers, pizzas and hot dogs.

The Galley Room is open Tuesday to Saturday from 4.00pm until late.
