Lark Distilling Co has announced that celebrated Australian chef, Peter Gilmore as its official Brand Ambassador with the two joining forces to share their passion for innovation, precision, provenance and craft.

Gilmore, who is the Executive Chef at Sydney’s award-winning Quay and Bennelong restaurants will work closely with Lark to create experiences that will aim to take flavour and taste into a new world showcasing the very best of Tasmania’s single malt whisky and gastronomy.

In announcing that Gilmore was joining the team on Wednesday night, Lark’s Head of Marketing, Jason Whalley said: “With long-terms plans for the future of Lark and our new world of whisky, these two Australian icons will come together and create this together.

“Peter, we are absolutely thrilled that you will join Bill, Sash, myself and the team on this journey to create our new world of whisky and help shape more experience activations together and share with the world what makes Lark so special and unique; why Tasmania makes a difference and why consumers in the bar, or over dinner, or at home should want to grab their bottle of Lark and celebrate a moment that counts, so welcome to Lark, Peter.”

The announcement coincided with the official launch of Lark’s first Lunar New Year Single Malt, Year of the Wood Dragon, a limited-edition whisky that has been aged in 100 per cent first-fill Sherry and Port casks and finished in Seppeltsfield Tawny casks.

Speaking at the launch, Gilmore said: “I am super-proud to partner up with Lark, it’s something that I haven’t really done before – I am always very careful about where I look at putting my brand – but the relationship, the passion and really the reason that Lark exists is Bill. I am a whisky drinker, I do love Tasmania so this really was a no-brainer.

“I’m very excited about the opportunities that lay ahead, we see this as a long-term partnership. I am really intrigued by the innovation of new world whisky, and Lark is really at the forefront of that.”

Whalley added: “We are delighted to welcome Australia’s most celebrated and innovative culinary force in Peter Gilmore to the Lark family in 2024.

“When he’s not at the helm of Quay and Bennelong, Peter can be found tending to his heirloom vegetable gardens at his new coastland property south of Hobart. Peter Gilmore’s commitment to creating ‘out of this world’ experiences is a perfect match for Lark, as well as his true passion for a dram, and making the home of Lark Distillery his new backyard.”

In saying he hopes to spend more time at his farm, Gilmore said: “I’m a part-time Tasmanian and a full-time whisky lover, so I think this is a marriage made in heaven and I’m really excited for what the possibilities may be in the future.”
