Manly Spirits Co. Distillery has launched its Christmas-themed Ruby Dusk Gin.
Described as an “Aussie Christmas gin from the Beaches” Ruby Dusk is flavoured with roasted wattleseed, black cherries and cascara – the husk of the coffee cherry (the fruit that contains the coffee bean).
Vanessa Wilton, Manly Spirits Co-Founder and Marketing Manager, said: “Every year tonnes of Cascara, the husk of the coffee cherry, is discarded as waste from coffee production and with it, its unique cherry flavours.
“At Manly Spirits, we’re always thinking of new and creative ways to reuse, recycle and give produce a new life. With cascara being discarded, it is a pity to lose the rich flavours of rosehip, hibiscus, and cherries. We believe these deserve to be celebrated in a new way.”
Ruby Dusk Gin possesses a red hue, derived from an 18-hour infusion of cherries, and is said to be inspired by the traditional flavours of Australian Christmas desserts.
Manly Spirits Co. suggests serving it with a premium light tonic and garnished with fresh lemon. The gin follows up last year’s Amber Spiced Gin, which was Manly Spirits Co.’s first Christmas release.
Ruby Dusk Gin was released for sale on November 9 2021.
