Sydney hotel, bar and restaurant group Merivale has announced a series of staff changes, including the promotion of Frank Roberts to the role of director of food & beverages.

Roberts began with Merivale in 2003, with his previous roles including manager of Lotus in Potts Point and restaurant manager at Peter Doyle's three-hatted est, then group restaurant operations manager. 

New addition Paul Mant joins Merivale from bar consultancy business 'Heads, Hearts and Tails' in London, which he founded. Previously, Mant worked with Soho bar Quo Vadis, which won Tales of The Cocktail's World's Best New Bar in 2009 and Best Bar in the World in 2010. Mant will serve in the role of the group's bars manager, after over 15 years in the UK industry.

Meanwhile, former head of events Kathy Savill has also been promoted, to director of sales & events. Savill's thirty years experience in hospitality and sales include four years in her previous role for Merivale. Savill's new portfolio will expand to take on all facets of promoting Merivale's business, including corporate, private, tourism and leisure markets.
