One of Sydney’s hottest inner-city cocktail bars – ivy Pool Club – is about to take a trip to the seashore with the introduction of a range of unique marine-inspired cocktail accessories for their new menu.

Hotel giant Merivale has asked leading international designer Edward & Co to create six new sea-inspired designs to hold the new ‘seashell’ cocktails to be created by Merivale head mixologist, Mikey Enright.

The six designs will include a silver starfish that holds six individual drinks, as well as free-form conch shells and clam shells.

The cocktails will all follow the sea-theme and will feature spirits such as Belvedere Pure vodka, Hennessy VS Cognac and 10 Cane rum.

“ivy is one of the most unique design-lead establishments that could happily grace any city. The Pool Club inspired me to think of St Tropez in the 1950s and come up with the 'Clamourous' (clam shell) and other shell concepts,” said Edward & Co designer, Edward Coutts Davidson.

Beyond the seashore, Merivale also currently has its Level 6 ivy and Hemmesphere bars playing host to the recently launched Louis XIII ‘Taste of Luxury’ Cognac experience.

Available in selected venues nationally, the exclusive on-premise tasting program allows patrons the opportunity to sample the super-premium Cognac in either a 10, 15 or 30mL pour.

A rare opportunity, assistant brand manager Jeremy Church said that he was “excited to offer this global initiative to consumers in Australia”.

“We look forward for more consumers having the opportunity to experience the King of Cognacs, Louis XIII,” he added.

Louis XIII is a blend of 1,200 eaux-de-vie aged from 40 to 100 years and is created exclusively from the grapes of Grand Champagne, the most highly-regarded region of Cognac.
