One of Merivale’s flagship venues, Establishment, will launch a unique bar dedicated solely to gin in Sydney tonight (Mar 25).

Located in the venue’s existing Garden Bar, the brand-new ‘Gin Garden’ is Sydney’s first gin concept bar.

“We wanted to utilise the conservatory style of space,” said Merivale group bars manager, Mike Enright. “Gin’s colonial history fits the space perfectly.”

The garden will initially stock 24 different gins, including Cadenhead’s Old Raj and Plymouth Navy Strength, although Enright said they hope to increase that number in future.

The garden will also feature a gin-focused cocktail list with the ‘Pink Tonic Punch’, made from Plymouth gin, Plymouth Sloe Gin, rose wine, pink grapefruit juice and Merivale’s own pink grapefruit tonic, the signature drink.

The development of the ‘Gin Garden’ comes as the spirit experiences a resurgence in popularity in Australia.

According to Roy Morgan research (Jan07-Dec08), more than 750,000 18-plus Australians consumed gin in a four-week period, up from 688,000 the previous year.
