Merivale is set to open its highly anticipated rooftop bar at Coogee Pavilion later this month.

Speaking to TheShout, Merivale CEO Justin Hemmes said the latest addition to the three-storey venue will provide a casual yet sophisticated setting with an Eastern Mediterranean menu as the focus.

“You can’t eat pork chops every day of the week,” he joked.

“We wanted to offer the locals and Sydney-siders alike something for every occasion.”

Hemmes said the Merivale team had taken the time to analyse current market trends before deciding on the solution for the rooftop space.

“The result is magnificent,” he said.

“It truly is a magical space and it was an incredible adventure discovering the spaces within spaces – a treasure hunt of sorts.”

A fun and relaxed social destination, Coogee Pavilion Rooftop will be home to four indoor and outdoor bars as well as a sweeping balcony to cater for a wide range of tastes and occasions.

“We hope to give the existing patrons something fresh and exciting while at the same time attracting new customers,” he said.

Hemmes revealed to TheShout the next step for the Coogee Pavilion includes an extensive DA for the middle level of the venue.
