Landmark Paddington hotel The Light Brigade has gone a little more upmarket with the opening of a new swanky restaurant and cocktail bar – La Scala on Jersey – on its first level.

Fronted by celebrity chef Darren Simpson, of La Sala restaurant, Surry Hills fame, the new bistro and bar will focus on simple, fresh flavours with an Italian bent.

The cocktail bar will be led by Gio Buscemi and will feature all the classics, along with signature cocktails like the Black Cherry and Amaretto Martini, made from Belvedere vodka, Amaretto, cherry brandy, lemon juice, fresh cherry and orange bitters.

Owner Dean Haritos said that he was “delighted” to have Simpson and Buscemi on board to help create a new Paddington and Woollahra destination.

“We’re a bit cheeky but we take seriously our commitment to provide excellent food, wine and service,” he said.

La Scala on Jersey is open Tuesday – Saturday from 5.30pm till late.
