Sydney publican Ben May has launched Burger Liquor Lobster, his own pop-dining concept in his two venues, The London Hotel in Paddington and Manly Wharf Hotel.

Burger Liquor Lobster brings to an end the popular Chur Burger concept that May’s team operated under licence in the venues over the last 12 months.

The new restaurant offers traditional burger favourites as well as lobster, prawn and soft shell crab options and salads.

May told TheShout that Chur was a huge success but it was time for a change.

“We were very confined by what Chur needed to be – six burgers and that was it,” he said.

“With Manly being on the seaside, we wanted to do seafood and have a bit more selection and variety.”

The fit-out for Burger Liquor Lobster channels a “cheeky seaside vibe” with nautical colour palette.

The restaurant offers patrons the option to go lean and replace rolls and buns with lettuce cups instead. Salads include three alternatives: Classic Waldorf, Lobster Cobb, and Prawn Cocktail.

An accompanying cocktail list includes the Lychee Passionpit (vodka, lychee, passionfruit sorbet, sparkling wine), My Tini Wini (gin, lemon juice, lavender syrup, watermelon, raspberries, crème de peche), or Rock Lobster (Bulldog Gin, St Germain elderflower liqueur, lemon juice, pineapple juice, yellow Chartreuse, orange blossom marmalade).
