Johnnie Walker’s new Global Brand Ambassador, and Aussie bar legend, Tim Philips-Johansson is speaking at the Bloody Big Drinks Summit, and today The Shout is offering a sneak peek at what he has to say.

Tim’s presentation to the summit is called ‘Democratising Scotch’ and he gives a background into the history of Johnnie Walker before talking through how bartenders can and should be embracing Scotch as a key cocktail ingredient.

This is something Tim talked about with Bars and Clubs earlier in the year, when he first took on the Johnnie Walker role. He said that while bartenders have understood the changes and developments in the gin category and that different cocktails will require a different style of gin, that development has really happened with Scotch cocktails.

“As big as the breadth of flavour is in Scotch, we haven’t really got to the same point [as we have with gin]. It’s very much this cocktail has 50mls of Scotch in it and it generally falls to whatever house Scotch sits in the speed rail,” he said.

“That’s generally a blended whisky because it is quite flexible in flavour profile, but when you look at how many amazing blended whiskies are out there all those flavour profiles in different speed rails are completely different.

“So I’m really excited to help be the conduit and also be the soapbox for bartenders to be able to talk about and be confident with using Scotch again in cocktails.”
