Bluetongue Brewery has announced the appointment of former Foster’s Group brewer Dermot O’Donnell as brewmaster.
O’Donnell brings with him extensive experience with more than 40 years in the brewing industry, most recently as Carlton and United Breweries’ (CUB) head brewer and beer ambassador.
He joined the Bluetongue Brewery in May, has overseen the brewery’s completion and is now looking forward to ‘taking on the big players’.
“We are delighted to welcome Dermot as our new Brewmaster,” said Pacific Beverages CEO, Peter McLoughlin.
“With the brewing commencing in June and the first taste of bottles off the packing line in late July, Dermot is an exciting and valuable addition to the inner workings of the iconic Australian beer.”

After completing his Master Brewer qualifications from the University of Birmingham and the Institute of Brewing and Distilling, O’Donnell has brewed in the United Kingdom, Melbourne and Sydney designing such beers as Toohey’s Blue, Carlton Cold, Carlton Mid and developing the process used for Pure Blonde.
“I’ve always appreciated the quality taste of Bluetongue beer, so I’m looking forward to working with a great brand and the state of the art facilities at the new brewery,” he said.
“Bluetongue is so lucky to have been able to create this brewery from scratch on a green field site. This has meant that we will be able to brew beer more efficiently and with no additives or preservatives because of the advanced nature of the brewery. Essentially, we are making the type of beer that all brewers love to drink. We wouldn’t have it any other way.”
The Bluetongue Brewery will start with a crew of approximately 45 onsite, mainly involved in brewing, packaging and administration, which is set to increase later this year.
